FALL PLANTING

Don't throw away your leftover seeds.

This is a good time of the year to start your second crop.

Start rows or blocks of:

Lettuce, Kale, Radish, Spinach

 FREEZING TOMATO'S

 Those tomato's are still producing and by now if you had a good season you have arm loads of tomato's.  If you can't use them right away you can freeze them.  This procedure is good for someone who is also short on time and doesn't have the time to do some canning.

• Place several tomato's in rapidly boiling water for 30 - 60 seconds.
• Watch for the skin to start splitting.
• Spoon them out and place immediately into ice water to stop them from cooking.  I usually fill my sink with mixture of cool water and ice. 
• The skin should peel right off.  Cut into wedges and freeze in freezer bags until ready to use.

 HERBS

DRYING OR FREEZING

• Invest in a dehydrator.  It is not that expensive and the amount of fresh herbs you can dry in a short period of time is great!
• Dry naturally by tying 3 to 4 stems of herbs and hang in a dry, warm, dark room.  This takes longer but it's also great to smell those herbs in the air.
• Blanche and Freeze.  Follow the instructions for boiling/ice bath tomatoes.  Increase the boiling time to 1 - 2 minutes until they start to wilt.  Dry on towels or paper towels.  Place 2 teaspoons of herb in ice cube trays and cover with water or chicken broth and freeze.  You can pop these out and place in a freezer bags.  Anytime your making a stew or sauce you can throw these in directly from the freezer.
• Pesto.  Use that Basil.  Make an over abundance of Pesto and freeze in ice cube trays.  Pop out and and save in freezer bags.   ** Recipe to th right.
  

 Miscellaneous Tips:

1. Use rubber gloves when cutting and de-seeding hot peppers.
2. Compost Pile.  When cleaning up your vegetable garden, any plant that was diseased should be discarded not composted.
3. Fall is the perfect time to build a cold frame.  Next year you can get a jump start on your growing season
4. Rake those leaves right into your compost pile.  They are a good source of dry material and should break down before next year.  If you have a metal trash can, place the leaves in it and use your lawn trimmer to break down the leaves before you put them in your compost.Make sure to wear your eye protection.

PESTO SAUCE

3 cloves garlic

2 cups fresh basil

3 tablespoons pine nuts (pignolia)

dash of salt & pepper

1/2 cup extra virgin olive oil

1/2 cup Parmesan cheese grated

Using a food processor add garlic and mince.  Next, add basil leaves, pine nuts, salt and pepper.  Run processor and slowly drizzle olive oil through feed tube until all the ingredients are pureed. 

*If sauce looks to thick, add a little water or chicken stock.

** If you heat the sauce from ice cubes I always add either a little water from the water I used to boil the pasta or a cube of chicken stock which I also freeze in ice cube trays.
